Now that the meat is flavorful, put olive oil in a tagine, and place over an open flame. When the meat starts to cook, add chopped onion, chickpeas, tomatoes, and 400mL of vegetable stock. Cover the tagine and let it simmer for a an hour and a half. Be sure your flame is not as hot as it was when you started cooking. A light simmer is perfect for tagine. After some time, add squash and another 400mL of stock and then allow it to continue cooking for ninety minutes, checking it sporadically. If it looks dry, add a little bit of water.
After the cooking time, check the tagine. The beef should be very tender and flaking apart. Feel free to add a splash of salt and serve the tagine over seasoned couscous. You are now ready for an incredible meal.
